Last night I created something truly exciting. I was just playing around in the kitchen when I thought it would be fun to have a coffee ice cream drink. I do not regularly drink coffee but I was in the mood for the flavor 🙂 So I spent a while with my favorite kitchen appliance, my Vitamix. Anyways I do believe this concoction will make you flip.
This treat does have some unique items that may be harder to find but I do say it is worth it. The coffee flavored soy milk is available on in a six pack, Kikkoman Pearl Coffee Organic Soy Milk (Pack of 6), but I have found it at Winco locally for less than $2/box. Winco is a really unique supermarket which has lower prices than Walmart but treats their employees really well and pays them even better. They also have one of the best prices on cashews that I have found. Their bulk section is incredible.
I chose to use chocolate truffles because they do give it a really unique flavor. Costco sells huge boxes of truffles around the holidays which I usually get and they last me the year. I used 5 truffles but you can add more plant-based cocoa mix or a good dark chocolate bar instead if you cannot find truffles. Because both the soy milk and ice cream are sweetened you may use a darker chocolate and achieve still a similar to Frappuccino flavor. Now that I have created this I am guessing I am going to need to find a new source for inexpensive truffles now that I have created this recipe.
